Ingredients

2 boneless, skinless chicken breasts
1 egg, beaten
½ cup breadcrumbs
½ cup flour
1 cup tomato sauce
Mozzarella cheese
4 hoagie rolls
Olive oil (for frying)

Directions

  1. Preheat 400 degrees
  2. Cut each chicken breast in half (long ways) so that there are 4 halves
  3. Heat olive oil in frying pan
  4. Dip each chicken breast half into flour, then egg, then breadcrumbs
  5. Place chicken into frying pan and cook 3 minutes per side
  6. Place chicken into baking dish and cover each breast half with tomato sauce
  7. Sprinkle shredded mozzarella over each breast half
  8. Place in oven for 10-15 minutes and serve in hoagie rolls
  9. Optional – toast hoagie rolls in oven with a little bit of butter
