Ingredients

 1 cup Italian breadcrumbs
 Parsley
 1 garlic clove
 ¼ teaspoon salt
 ¼ teaspoon pepper
 ½ cup Parmesan cheese
 1 teaspoon lemon rind (optional)
 1 pound cod, haddock, or halibut
 2 teaspoons melted butter

Directions

  1. Preheat 325 degrees
  2. Mix all ingredients except fish and butter
  3. Rinse fish and pat dry
  4. Rub fish with butter and dip in breadcrumb mixture
  5. Bake at 325 degrees for 15-20 minutes, uncovered, until fish flakes
  6. Drizzle with additional melted butter
